Crispy Salmon with Edamame-Wasabi Purée and Shiso-Garlic Garnish

A simple, elegant dish that highlights crispy-skinned salmon over a creamy edamame and wasabi purée. Finished with toasted garlic and fresh shiso, this plate delivers bold flavor with minimal fuss—perfect for a light yet satisfying meal.

Ingredients
Salmon
1 salmon fillet, skin-on (approx. 6 oz) (cook time will vary depending on size of salmon, or wether its straight out the fridge or room temp) (aim for room temp before cooking)
Salt (optional)
Freshly ground black pepper
1 Tbsp extra virgin olive oil
Edamame-Wasabi Purée
½ cup shelled edamame
1–2 Tbsp dashi
1 tsp extra virgin olive oil
¼–½ tsp wasabi paste (adjust to taste)
Salt to taste
Optional: a small squeeze of lemon or ACV
Garnish
1 clove garlic, finely chopped
2 shiso leaves, chiffonade
Freshly ground black pepper
Instructions
Make the Purée:
Combine edamame, dashi, olive oil, wasabi paste, and a pinch of salt in a small blender or food processor. Blend until smooth, adding more dashi if needed for a creamy texture. Adjust seasoning with lemon or vinegar if desired.
Toast the Garlic:
In a small skillet over medium-low heat, add a drizzle of oil and the chopped garlic. Sauté until golden brown and crisp. Remove and drain on a paper towel.
Cook the Salmon:
Pat the salmon dry. Season lightly with salt (if using) and pepper. Heat 1 Tbsp olive oil in a skillet over medium-high heat. Place salmon skin-side down and press gently to ensure full contact with the pan. Cook for 4-5 minutes until the skin is crisp and golden. Flip and cook another 4-5 minutes, or until just cooked through. (aim for internal temp. 125) Take it off heat, and let it rest for 1-2 minutes. (medium rare)
Plate the Dish:
Spoon the edamame-wasabi purée onto a plate. Set the salmon on top, skin-side up. Sprinkle with toasted garlic, shiso, and a touch of fresh ground pepper.
