A nourishing and protein-packed pasta dish featuring Brami high-protein pasta, tender chicken breast, and vibrant vegetables, all tied together with a zesty chimichurri finish.

Ingredients
1 oz Brami pasta
100–120g chicken breast, cooked and sliced or shredded
1 medium tomato, diced
1 shallot, finely chopped
1 small clove garlic, minced
1/2 cup broccoli florets, chopped
1 Tbsp red wine vinegar
1–2 Tbsp leftover chimichurri (see previous recipe)
Salt (optional), to taste
Freshly ground black pepper, to taste
Parmesan cheese, grated (for garnish)
Instructions
Cook the Pasta: Bring a small pot of salted water to a boil. Add Brami pasta and cook according to package directions. Drain and set aside.
Prepare the Chicken: If not already cooked, season the chicken breast with pepper and a pinch of salt (optional), then grill or pan-cook until done. Let rest and slice or shred.
Sauté the Vegetables: In a skillet over medium heat, sauté shallot and garlic in a small amount of oil or water until fragrant, about 2–3 minutes.
Add chopped broccoli and cook until slightly tender, about 3 minutes.
Stir in diced tomato and red wine vinegar. Cook for another 2 minutes until the tomato softens and the flavors combine.
Combine Everything: Add the cooked pasta and chicken to the skillet. Toss with chimichurri, season with pepper, and salt if needed.
Finish and Serve: Plate and top with freshly grated Parmesan cheese.
